IF you are like me, you have an undying love for Summer & Mexican food!! I literally never tire of eating chips and salsa, guac, & tacos!! So when I recently attended a friend’s party & fell in love with her salsa, I insisted on having the recipe. Since then I have made it twice and it has been a hit each time! An added benefit–it is actually not so bad for you! I made mine with all organic ingredients (except for 3 ingredients)!
So spice up your Summer & 4th Of July Parties with this Confetti Salsa!
What you Need:
- 1 Red Bell Pepper
- 1 Orange Bell Pepper
- 1 Yellow Bell Pepper
- 1 Green Bell Pepper
- 4 Stalks of celeby
- 2-3 Jalapeño Peppers
- Clean and Chop up the above ingredients! Fair warning: If you dice them all up by hand it takes FOREVER! This last time I used a food chopper and it was AWESOME! It saved me SO much time!
- 1 can of Pinto Beans
- 1 can of Black Eyed Peas
- 1 can of White Corn
- Drain & Rinse the above canned ingredients. Combine in a large bowl with the first set of ingredients.
- 1 cup of Vegetable Oil
- 1/2 cup Cider Vinegar
- Bring these two ingredients to a boil. Once boiling, add 1/2 cup of white sugar and stir until dissolved! Pour over all ingredients & chill. Drain before serving!
